Abstract

This article presents an analysis of the city of San Salvador de Jujuy which, in order to compete in the national and international tourism market, offers new attractions oriented towards new active forms of consumption with an emphasis on gastronomic heritage, in a context of social, economic and cultural processes that guide the transformations of cities.

The difference is generated taking as a basis the exceptional or innovative, from processes of material and symbolic transformation of some areas of the city to adapt it to the functions of consumption spaces (gastronomic poles, markets, festivals, among others) and that must coincide with current demands (local citizens, tourists and investors). In this context, urban marketing emerges as a tool to project new attractions to new consumers.

The methodological strategy was based on a qualitative approach, using a survey and analysis of secondary sources, participant observation in gastronomic spaces and interviews with key actors to collect information. The work reflects the close relationship between tourism, gastronomic heritage and spaces for consumption, with the intervention of the Provincial and Municipal Government and private actors, in order to position San Salvador de Jujuy as a distribution center.
